What Are Shabu Shabu Noodles?

2 1/2 ounces (60 grams) pork, thinly sliced
1 serving egg noodles
1 tablespoon oyster sauce
1 tablespoon soy sauce
1/2 tablespoon vinegar
2 stalks Welsh onion, thinly sliced
1/2 myoga (Japanese ginger), thinly sliced
2 tablespoons sesame oil
1 bunch coriander
1 egg yolk
  1. Combine water and a little salt and bring to a boil. Quickly immerse the pork slices in and out of the hot water until no longer pink. Place in ice water until chilled.

  2. Boil the noodles until al dente. Drain well.

  3. Transfer drained noodles onto a plate and add oyster sauce, soy sauce and vinegar. Mix to coat the noodles well.

  4. Place pork slices, Welsh onion and myoga on top of noodles.

  5. Heat sesame oil in a frying pan until very hot. Carefully pour hot oil on top of noodles.

  6. Top with coriander and egg yolk and enjoy.
