1/4 cup ricotta cheese
12 egg yolks
INSTRUCTIONS
  1. Place 1 teaspoon of ricotta on a wonton wrapper. Carefully put 1 egg yolk on top of the ricotta; be careful not to break the yolk.

  2. Dip your finger in a small amount of water and wet the perimeter of the wonton square. Using another wonton wrapper, cover the filling and gently press the two seams together. Push out any air bubbles.

  3. Cook ravioli in a pot of gently boiling salted water for about 2-3 minutes, or until they float to the top.

  4. Serve with browned butter, thyme and shaved Parmesan.

1 container burrata cheese in water (4 balls)
Nutmeg, grated
INSTRUCTIONS
  1. Using the creamy center of the burrata ball, place 1 tablespoon on a wonton wrapper.

  2. Grate a small amount of nutmeg on top.

  3. Close up ravioli using the same method as above.

  4. Cook ravioli in a pot of gently boiling salted water for about 2-3 minutes, or until they float to the top.

  5. Serve with pesto and shaved Parmesan.

4 ounces goat cheese
1 small cooked beet
INSTRUCTIONS
  1. In a blender, add the goat cheese, beet and a pinch of salt. Blend until smooth.

  2. Place a tablespoon on a wonton wrapper and create ravioli using the same method as above.

  3. Cook ravioli in a pot of gently boiling salted water for about 2-3 minutes, or until they float to the top.

  4. Serve with a drizzle of olive oil and cracked black pepper.

1/4 cup frozen spinach, thawed and drained
1/2 cup ricotta cheese
1 lemon, zested
1 tablespoon chives, chopped
1 tablespoon parsley, chopped
INSTRUCTIONS
  1. In a food processor, add spinach, 1/2 cup ricotta, lemon zest, chives, parsley, salt and pepper. Pulse until mixture is smooth and light green in color.

  2. Place a tablespoon of filling in the center of a wonton wrapper and create ravioli using the same method as above.

  3. Cook ravioli in a pot of gently boiling salted water for about 2-3 minutes, or until they float to the top.

  4. Serve with a squeeze of lemon juice, olive oil, lemon zest and chives to garnish.
