Tiramisu Ice Cream Sandwich

INGREDIENTS
Tiramisu semifreddo:
1 can sweetened condensed milk
1/3 cup espresso, cooled
2 cups heavy cream
Lady fingers:
8 egg whites
8 egg yolks
1 1/3 cups + 1/4 cup granulated sugar
2 cups all-purpose flour
1 teaspoon baking powder
Mini chocolate chips, for decorations
INSTRUCTIONS
  1. For the semifreddo: In a small bowl, whisk together sweetened condensed milk and espresso until smooth. Set aside.

  2. In a large bowl, using a hand mixer, whip heavy cream until stiff peaks form. On low speed, slowly add the espresso mixture to the cream and beat on high until thickened. Transfer to a sheet tray lined with plastic wrap and freeze for 6 hours or overnight.

  3. For the lady fingers: Preheat oven to 350°F, and prepare 2 sheet trays with parchment paper and non-stick cooking spray.

  4. Using an electric stand mixer, beat the egg whites until soft peaks form. Slowly add 1/4 cup of sugar and beat on high until stiff peaks form. Set aside.

  5. In a separate bowl, beat egg yolks and remaining sugar until thick and pale in color. Fold half of the egg whites into the egg yolk mixture until just combined, followed by the flour and baking powder. Once the mixture has almost combined, fold in remaining egg whites until fully incorporated.

  6. Divide mixture evenly into prepared pans and bake for about 20 minutes, or until a toothpick placed in the center comes out clean.

  7. Once slightly cooled, remove from the pans and place on a cooling rack for about 30 minutes to cool completely.

  8. To assemble the ice cream sandwich, place one lady finger cake upside down on a sheet tray lined with plastic wrap. Next, add the semifreddo layer, followed by the second lady finger layer. Wrap the entire sandwich in plastic wrap and freeze for 30 minutes or overnight to allow the layers to harden. Slice into squares and roll in mini chocolate chips before serving!
