Orange Bread Pudding

INGREDIENTS
4 slices thick white bread
1 orange, cut into segments
100 milliliters orange juice
150 milliliters milk
2 eggs
30 grams sugar
1 tablespoon cointreau
Confectioners' sugar
Butter
Sprig of mint
Whipped cream
INSTRUCTIONS
  1. Cut bread into cubes. Butter a casserole dish and lay bread cubes on top.

  2. Whisk egg in a bowl. Add sugar, orange juice and milk and mix well.

  3. Pour egg mixture over the bread. Gently press down to help bread absorb the liquid. Arrange orange segments on top and drizzle confectioners' sugar.

  4. Bake for 30 minutes at 200 degrees C. Serve with whipped cream and garnish with mint if desired.
